He talks about his approach to regenerative agriculture, which involves letting the cover crop grow, not tilling the soil, and using pruning as mulch. Julian explains that the traditional approach in Spain is to keep the land clean, but he believes this is not necessarily a sign of healthy or productive land. He brings his knowledge of ecology and nature conservation to the olive grove, working in harmony with plants and the soil.
